This wine is made from the traditional sparkling wine varieties of Pinot Noir, Chardonnay and Pinot Meunier. After 5 years extended contact with the yeast lees, the mouthfeel is rich and creamy. It has texture and depth from the yeast, whilst the sugar dosage highlights some fresh berry & citrus notes up front. As it finishes the citrus also comes through as a preserved lemon character which is both developed and fresh at the same time. The acid length is clean and refreshes for another sip.
Light to medium intensity seafood and white meat dishes. Perfect to accompany smoked salmon or pate.
SERVING TEMPERATURE These sparkling wines are made to be served cold – less than 4 C. Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2-3 hours.
