The dark and inky colour, has softened and gained a brown brick tinge with the bottle ageing. The aroma is rich in savoury notes. Tobacco and cigars give way to dark chocolate & stewed plums.
Some dark fruit notes of blackberries and stewed plums give a nice lead in to what is a more savoury style of sparkling red. The sugar dosage gives peeks of fruit but mellows the mid palate weight which has tobacco and peppery notes. The tannins of the Durif linger, as the flavours recede and leave a dark chocolate mouthfeel. As it finishes the elements of fruit and savoury combine to smooth the palate for another sip.
A full flavoured sparkling red wine suits full flavoured food.
Great with antipasto, smoked fish, or even with a chocolate dessert to balance the sweetness.
SERVING TEMPERATURE These sparkling wines are made to be served cold – less than 4 C. Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2-3 hours.
