The violent purple hues of Chambourcin are subdued by ageing in the bottle for 6 years. The mousse has a brick red tinge indicative of its age.
The aroma has a rich plum character. It’s a combination of plum pudding, Black Forest Cake and Rhubarb crumble.
Preserved fruit & stewed plums lead the palate on the initial taste, but quickly yield to some more complex chocolate and coffee notes.
Across the mid palate a sense of Old Gold prevails. Dark Chocolate with some of the character of rum & raisins.
As it lingers in your mouth a creamy softness from the yeast ageing, gives a pleasant after taste to round out the wine.
Would suit both dessert and main course. Rich strong flavoured foods would work well.

Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2-3 hours.
