The aroma is developed and rich. There are buttery toast aromas with hints of lime marmalade. The ageing of the wine and the breakdown of the yeast cells is hard to delineate.

This wine is a mouthful of aged Semillon and Pinot characters. The front palate offers toffee caramel notes combining with a mineral zest. The mid palate has lemon curd and lanolin notes which  are rich but round. The final sugar and acid dosage has freshened the wine and given a clean lingering zing to the finish whilst not overriding the depth of the aged characters.

The depth and body of this wine will match a variety of foods. It would be a great accompaniment to rich canapés.

SERVING TEMPERATURE These sparkling wines are made to be served cold – less than 4 C. Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2-3 hours.
