Dark cherry red in colour, it shows a hint of rust from the long bottle ageing.
Cherries and berries dominate the aroma. Some floral notes of violets and lavender give a fresh and lifted nose.
The palate is rich with fruit. Plums and blackberries fill the front palate. The mid palate is generous and has sweet stewed characters like plum pudding. The lingering spiciness accentuates this and as it slowly fades in your mouth, the oak character gives a mocha note, which ensures the overall impression is balanced.
Great to match with rich, full flavoured foods and would suit game, lamb or venison.
SERVING TEMPERATURE These sparkling wines are made to be served cold – less than 4 C. Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2-3 hours.
