The mousse has a brick red tinge after the long bottle ageing. The aroma has distinctly herbaceous tone. Mint & Earl Grey tea dominate over some subtle stewed berry fruit notes.
The palate is a swirling combination of stewed fruit and the tea notes that carry on from the aroma. In the mid palate the rich fruit flavours subside and the more savoury peppery notes evolve. The tannins, oak and yeast from bottle ageing combine give depth and complexity.
The finish is rich and full, but the tannins are firm and give structure and balance, so that the wine appears drier than the sugar dosage would suggest. This is a full flavoured wine best appreciated with full flavoured food. The tannin structure will make it a great match for roasts, duck or smoked smallgoods
SERVING TEMPERATURE These sparkling wines are made to be served cold – less than 4 C. Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2-3 hours.
