Dark Plum in colour, the mousse is bright and lively and belies its age in bottle.
The aroma is both fruity and savoury. A touch of plums and glimpse of new leather boots.
The long bottle ageing gives this wine time to shine and show sparkling shiraz’s many facets. Big and fruity up front, the generous dosage highlights cherries and stewed plums. In the mid palate the more savoury notes of tannins and oak, balance and give depth. As it lingers the overall impression becomes savoury. Oak, yeast, fresh tobacco and a touch of spiciness all meld together to give a serious but svelte moody finish.
Well suited to sipping alone, this will also match a variety of foods, from BBQ to Black Forest cake.
SERVING TEMPERATURE These sparkling wines are made to be served cold – less than 4 C. Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2-3 hours.
