A fine bead sits atop the straw hued wine.
The dominant aromas are from the yeast autolysis. Bready, nutty notes lift as the bubbles evolve. Hints of preserved lemons come through when the yeasty characters subside.
The palate shows more of the citrus and berry notes from the Chardonnay and the Pinot Noir.
The initial palate is of grapefruit and crisp pears associated with Chardonnay. As you move to the mid palate there are hints of berries from the Pinot which combine with the complexity of the creamy yeast.
This finish is fresh with a subtle acid note that gives length of flavour and lingers in your mouth.
Always great for pre dinner drinks or enjoy with light to medium intensity seafood and white meat dishes.
SERVING TEMPERATURE These sparkling wines are made to be served cold – less than 4 C. Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2-3 hours.
