Straw in colour with a green hue. Tight bead and mousse forms on pouring. The aroma is lively and fresh. A grapefruit and citrus burst are apparent as soon as it hits the glass.
Whilst the initial citrus notes are strong the palate highlights both the fruit and the flavours from ageing on yeast lees in the traditional bottle fermented sparkling method. After the Citrus and lemon zest notes subside in the mid palate, a creamy yeast character combines with a sherbet note. As it lingers in your mouth the acid persists on the finish. The balance of citrus and yeast notes last to the end to give a well balanced wine.
