The wine has a slight gold tinge
For a wine on yeast lees only 18 months the aroma is quite developed and yeasty. The Pinot notes are of stewed fruit.
The warm bread and yeast aromas meld into the front palate, which highlights subtle berry notes. These mix with a fresh brioche character and gives the impression of a baked berry tart as it passes on to the mid palate. The mid palate is generous and fuller than the low sugar dosage would suggest. As it lingers the nutty toasty notes give way to a residual citrus note on the finish. The citrus acid structure enhances and balances the finish.
Light to medium intensity seafood and white meat dishes. A great aperitif.
SERVING TEMPERATURE Sparkling wines are made to be served cold – less than 4 C Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2-3 hours.
