The wine is dark brick red and the mousse carries a tinge of this after the long bottle ageing.
The aroma is herbaceous. A resinous Pine note pops out followed by stewed fruits. The palate combines rich stewed fruit and blackforest cake. Initially it is the fruitier notes, like a boiled fruit cake, which are most apparent. As it reaches the mid-palate and fills the mouth, dark chocolate is conjured. The blackforest cake effect. The tannins and oak are relatively soft from the combination of the sugar dosage and the long bottle ageing. The finish is rich and smooth with the flavours lingering long after the last sip.
This is a full bodied and full flavoured wine. Would go equally as well with a Beef Wellington or rich fruity or chocolate dessert.
SERVING TEMPERATURE These sparkling reds are made to be served cold – less than 4 C. Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2-3 hours.
