A brick red mousse sits above the deep plum colour of the wine as it is poured.
The aroma is fruity and ripe. An array of plums and berries entice a first sip.
The palate from front to back is a little like rum & raisin chocolate.
There are some dried fruit notes combining with the dark plum character at the front. As it reaches the mid-palate dark chocolate fills the mouth. The finish has some of the aged wine, and charred oak characters of rum or port.
The combination of the flavours from the long bottle ageing and the slightly lower sugar dosage give a finish that is smooth but not sweet. The flavours linger till you can’t resist any longer and take another sip.
Neither sweet nor savoury makes it a match for either. Would go just as well with a BBQ Rump or a chocolate dessert.
SERVING TEMPERATURE These sparkling reds are made to be served cold – less than 4 C. Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2-3 hours.
